Delicious and traditional dish with rice, chicken, peas and corn, originary of the central coast in Peru. For 8 people:
- 8 portions of chicken
- 1/2 cup of vegetable oil
- 1 chopped medium onion
- 3 chopped cloves of garlic
- 1/2 cup of beaten yellow pepper
- 1 cup of chopped coriander (cilantro)
- 2 peppers (1 chopped, 1 in strips for decoration)
- 3 cups of rice
- 1 cup of peas
- 1/2 cup of corn grains.
- 2 1/2 cups of boiling water
- 1/2 cup of beer
Fry the chicken, adding salt and pepper. Put it aside.
Brown in the same oil the garlic, the onion, the yellow pepper and the coriander.
Add the chicken, the beer and continue cooking until the chicken gets ready.
Take out the chicken. Don’t let them cool down.
Add the rice, the peas, the corn and the pepper.
Add the water, verifying the season and continue cooking until the rice gets ready.
Serve the rice with the chicken and decorate with pepper strips.
