Arroz chaufa (Chaufa rice)

The Chaufa rice is one of the Chifa main dishes. The Chifa is the delicious result of mixing the peruvian and chinese food; it’s so popular that you can easily find a Chifa restaurant almost in each neighbourhood in Lima. Of course, the Chaufa rice has a lot of variations (yes, we’ll have it here at too). We’ll see more of Chifa recipes later, but now it’s important to start here. Come on, it’s easy and tasty.

  • 1 kg (2.2 lb) of cooked rice
  • 250 g (9 oz) of boiled pork
  • 250 g (9 oz) of boiled chicken
  • A omelette made with 3 eggs
  • 3 tablespoons of chopped green onion
  • 1 tablespoon of chopped ginger
  • 1/2 cup of soy sauce
  • Vegetable oil

Heat the oil and fry the meats and the ginger. Add the green onion, season and mix with the omelette, cut in pieces.

Add this mix to the rice with the soy sauce. Ready!

  1. I like to marinated the garlic, and chicken in soyce sauce for a few hours and then fry it, after that use the juice to complement the rice….taste sooo good.

  2. You need to try this dish with the spicy cheese sauce that comes with “Papa a la Huancaína”

I must warn you once you try this there is no coming back.
